Here’s a tip if you want to write about your dinner — don’t eat food that’s hard to spell!
Tonight we had quesadillas with shredded cheddar cheese and spicy chicken as the stuffing. The chicken breast pounded flat, then cut into 1″x1/2″ pieces, and stir fried with fajita seasoning.
Easy, quick and tasty!

We ate yesterday’s leftovers for lunch, so for supper tonight we had chicken vegetable soup. To round out the meal, I made tea biscuits, from the recipe in my well-used, and rather oily, ”Cooking with St. Lawrence Corn Oil.”

Tonight’s dinner was beans and weiners, with pan fried mushrooms and asparagus on the side. Because the dinner was so easy to make, the substitute chef decided to make chocolate chip cookies for dessert.

Who’s in charge of taking the dinner pictures? Apparently no one, because, once again, we wolfed down the dinner without stopping to take a photo.
The chef made a delicious sauce — tomato sauce, simmered with fried diced onion, celery, mushrooms and ground beef, with oregano and basil added for seasoning.

Thank goodness for birthdays — anything you eat at a birthday celebration has zero calories! It’s the chef’s birthday today, and we enjoyed some delicious buffalo wings, with fries, and a few token celery and carrot sticks. No one remembered to take a picture, but they looked something like this:

The chef bought a roast chicken from the grocery store today, and sliced it up for dinner. Served with steamed carrots, broccoli and asparagus, and tossed salad, it was a delicious spring meal. Tomorrow is the chef’s birthday, so the sous chef will be cooking (or dialling). I hope there’s plenty of leftover chicken!

Another great night for barbequing, so we had grilled burgers and mushrooms, with tossed salad. The chef was tired from a day of golfing and swimming, but still managed to make an excellent dinner.
