Dinner for One

The chef has run off for a couple of days, but at least the fridge was filled before he disappeared. So, tonight’s dinner is leftover steak and salad (again!), and fruit for dessert.

Yesterday’s post reminded me of a cookbook that I got as a shower gift — Betty Crocker’s New Dinner for Two Cook Book. That’s my copy, shown at the left. It’s from the 11th printing, in 1971, and is in pretty bad shape, as you can see. It has all its pages, but they’ve separated from the binding, so it has to be opened veeerrrry carefully.

There are lots of family favourite recipes in this book, and you can quickly spot those because of all the spots and stains on the best-loved pages.

It’s based on menus, which were very handy for a new cook. The dishes range from Texas Hash, in the Frankly Thrifty chapter, to Pheasant en Creme, in the When Company Comes section.

There’s even a section called, So You’re Back to Two. That’s sounds appropriate, so I’ll have to take a closer look at some of those recipes. I think I’ll skip this salad recipe though. Or maybe it would be okay without the cheese.

Green Pea and Cheese Salad

  • 3/4 cup cooked peas
  • 1/4 cup diced Cheddar cheese
  • 1 tbsp finely chopped onion
  • 2 tbsp mayonnaise
  • 3/4 tsp prepared mustard

Combine peas, cheese and onion. Toss with mayonnaise and mustard. Serve on greens. 2 servings.
