What could be more Canadian than something maple? So, in honour of Canada Day, here’s a recipe for Map-o-Spread. In the good old days, we had that on our toast, and it was just as sweet and gooey and yummy as you’d imagine. I still find Map-o-Spread in the grocery store occasionally, but don’t buy it very often. Any damage to your teeth, or blood sugar level, is your own responsibility.
And if you want more maple, you can make your own Maple Flavoured Syrup.
- 3 cups brown sugar
- 1 cup all-purpose flour
- 2 cups evaporated milk
- 1 tbsp butter
- 1 tbsp maple extract
In top of double boiler, combine brown sugar and flour. Stir in evaporated milk until smooth. Cook over simmering water until very thick, stirring often.
Remove from heat. Stir in butter and extract. Cool.
Pour or spoon into plastic or glass container. Cover and refrigerate. Makes about 4 cups.
