Tonight the chef made Spanish Toss, using the recipe that I posted a couple of days ago. It tasted great, and the chef said it was really easy to prepare. Next time we might use a bit less olive oil, but that’s a matter of taste.
We still have some President’s Choice Hamburger Buns left, and they’re really flat and dense, similar to pita bread. Maybe we could use those to make little pizzas, as in the following recipe.
This recipe is from Quickies: Ten Quick Ways with Everyday Foods, one of my favourite cookbooks. We could cook the bacon in the microwave, to get it nice and crispy. There’s fresh basil in the garden, and we could use Cheddar cheese, instead of Swiss. Or maybe grate a couple of the Mini-Bels in with the Cheddar. Yum!
Microwave Bacon & Tomato Pizza
Sprinkle 2 pitas with:
- 1 cup grated Swiss cheese
- 1 chopped seeded tomato
- 3 slices crumbled cooked bacon
- 2 tbsp chopped fresh basil
- Microwave on a double thickness of paper towel, on medium, 2 to 3 min.
- Drizzle with 1 tsp olive oil
