Cajun Dirty Rice

Tonight the chef grilled lamb chops, and served them with microwaved potatoes and asparagus. The lamb was cooked perfectly and the whole meal tasted great.

Here’s another of our favourite recipes, to inspire the chef some day in the future. It’s from a Kraft cookbook, Kraft Kitchens: Dinner On Hand, which has quick and easy recipes.

One of the nice features in the cookbook is tables that list variations for the basic recipe, so it’s easy to prepare dinner with the ingredients you have on hand.

Cajun Dirty Rice

  1. Brown 1 lb ground beef and 1 chopped onion in a large saucepan.
  2. Add 1 can (10-3/4 oz) chicken broth, 1 chopped pepper, 1 chopped celery stalk, 1 tbsp chili powder, 1 tsp ground cumin, and 1 tsp dried parsley.
  3. Add 1-1/2 cups Minute White Rice and 2 chopped green onions.
  4. Cover and let stand 5 to 10 minutes, or until rice is tender.

I sometimes add 1/2 cup tomato juice, to make it saucier, and usually omit the green onions.
