The garden is still producing lots of zucchini, so this pasta recipe might be a good way to use some. I’m sure any pasta could be substituted for the macaroni.

Fast Parmesan Zucchini Macaroni
- 1 shredded zucchini
- 2 tbsp melted butter
- 3 cups cooked macaroni
- 1/4 cup grated Parmesan
- pinch of nutmeg
- Sauté zucchini in butter for 2 minutes
- Add macaroni, Parmesan and nutmeg.
- Stir until hot.
Great with chicken. Serves 3.
