Parmesan Zucchini Macaroni

Tonight the chef made a delicious dinner of Romaine Salad with Sour Cream Maple Dressing and Salisbury Steaks. It was a great meal, and I’d have both dishes again any time.

The garden is still producing lots of zucchini, so this pasta recipe might be a good way to use some. I’m sure any pasta could be substituted for the macaroni.

Fast Parmesan Zucchini Macaroni

  • 1 shredded zucchini
  • 2 tbsp melted butter
  • 3 cups cooked macaroni
  • 1/4 cup grated Parmesan
  • pinch of nutmeg
  1. Sauté zucchini in butter for 2 minutes
  2. Add macaroni, Parmesan and nutmeg.
  3. Stir until hot.

Great with chicken. Serves 3.
