Larb, Spicy Sesame Snow Peas and Sticky Rice

Yes, that was my reaction when my wife suggested this for dinner tonight. What is Larb? Well it is a traditional Thai dish of spicy ground chicken, but in this recipe we used ground turkey, as recommended by the cookbook, because it is leaner.

The recipe is from Cooking Light, The Essential Dinner Tonight cookbook, from which we have had many fine dinners. Below are the recipes for three dishes — Larb, Spicy Sesame snow peas and sticky rice. It takes a bit of prep time to get everything ready, but not too long to cook, and it tasted great.

We left out the Serrano chile, so you could include that, if you like hot food. Or, let everyone add some hot sauce, after serving, so they can adjust their own level of heat.

Ingredients

Larb

  • 2 tsp grated lime rind
  • 1 tsp grated lemon rind
  • 1/4 cup fresh lime juice
  • 1 tbsp fresh lemon juice
  • 1 tbsp fish sauce (we substituted 2 tsp. soy sauce and  1 tsp. lime juice)
  • 2 tsp brown sugar
  • 1/2 tsp finely chopped Serrano chile ( not used in our version)
  • 1/4 tsp crushed red pepper
  • 1 tsp canola oil
  • 12 oz ground turkey breast
  • 1 tbsp chopped shallots
  • 1/2 cup coarsely chopped fresh mint (used 1 tbsp dried mint)
  • 1/2 head cabbage, cored and cut into wedges

Spicy Sesame Snow Peas

  • 1/2 tsp sesame oil
  • 1/2 lb trimmed snow peas
  • 1 tbsp rice vinegar
  • 1 1/2 tsp low sodium soy sauce
  • 1/4 tsp crushed red pepper
  • 2 tsp sesame seeds

Sticky Rice

  • 1/2 cup sticky rice
  • 3/4 cup water
  • 1/8 tsp salt

Directions

Larb

  1. Combine first 8 ingredients and stir with whisk, until sugar dissolves
  2. Heat oil in large non-stick fry pan, over medium  high heat
  3. Add turkey and shallots and sauté for 5 minutes or until browned, stirring to crumble
  4. Drizzle the juice mixture over the meat, stirring to coat
  5. Sprinkle with mint

Spicy Sesame Snow Peas

  1. Heat sesame oil in non stick fry pan over medium high heat
  2. Add snow peas and sauté for 1 minute
  3. Add rice vinegar, soy sauce and red pepper
  4. Cook for 4 minutes or until peas are crisp-tender
  5. Sprinkle with sesame seeds

Sticky Rice

  1. Rinse rice in cold water
  2. Put water, rice and salt in covered saucepan
  3. Bring to boil
  4. Then simmer for 17 minutes
  5. Remove from burner and let sit for 3 minutes
