Quick Coffee Cake

This coffee cake recipe is an old family favorite, and tastes best when it’s still warm from the oven.

My 2-year-old granddaughter helped make this cake, the last time we had it, and you can see a picture of the cake, below the recipe. She put the crumb topping on the cake, and took that job very seriously!

Quick Coffee Cake

  • 2 cups flour   
  • 3/4 tsp  salt   
  • 2 tsp baking powder   
  • 1/2 cup sugar
  • 1/3 cup shortening
  • 1  slightly beaten egg
  • 3/4 cup  milk
  • 2 tbsp  flour   
  • 4 tbsp sugar   
  • 1 tsp cinnamon
  • 2 tbsp butter


  1. Sift dry ingredients together. Cut in shortening.
  2. Combine egg and milk and add. Stir only until all flour is dampened.
  3. Spread in greased 8” x 8” x 2” pan.
  4. Sprinkle with mixed topping.
  5. Bake for 30 minutes at 375°F.
