Weekly Meal Plan 20160618

Summer officially starts this week, so the weather might affect our willingness to cook supper. We’ll see how it goes, and at least we have a plan!

There’s one new item on the plan this week – the Quick & Creamy Chicken Stew. We enjoyed the beef stew last week, and had two supper meals and a couple of lunches from it.  We can improvise with that Chicken Stew recipe, and use fresh vegetables instead of canned, and whatever else we have on hand.

We’ve made the Panko Pork before, but not for a long time, and here’s a picture of how it looked. And, as usual, I put fish on the menu, just for fun. We’ll never have it, will we?

How It Actually Went

Here’s what we actually had this week – we stuck to the plan pretty well. We made a big pot of the chicken stew, and had that for two nights, instead of just one. Keith made it in the slow cooker, so it wasn’t browned, but tasted great.

And look – we had fish twice! We did the sole in foil packets, with brown rice (Minute Rice), and we had fish and chips on Saturday, because our grandaughter came for supper. She has a lot of influence over the chef.
