Weekly Meal Plan 20161001

Here’s the plan for this week’s meals, with some spicy dishes to keep us warm on cool fall days. There are two new recipes – Grilled Halibut with Chimichurri and Mexican Beef and Rice Skillet. Both recipes look fairly easy, so maybe I’ll volunteer to make those!

Keith isn’t crazy about fish, unless it’s dipped in batter and deep fried, but maybe he’ll be tempted by the chimichurri topping. Or not, we’ll see!

How It Actually Went

Here’s what we actually had this week. Sunday and Monday were hectic, so we opted for easy meals on those days. I made the Mexican Beef and Rice skillet on Tuesday. It was easy to make, and really enjoyed it, with salsa on the side. There is a picture below, and it looks like lots of cheese on top, but I didn’t really add very much – maybe 1/3 cup of shredded Tex-Mex blend.

On Wednesday, Keith said the fish wouldn’t be too good at the supermarket, so we had pork chops instead. He’s very creative with his excuses, I’ll give him that! And he redeemed himself by making a delicious, but very spicy, Pasta Puttanesca on Thursday.
