Weekly Meal Plan 20161015

We have a busy week ahead, so I put some easy favourite meals on the menu. On Sunday, Keith will get a rotisserie chicken when he stops at Costco, so it doesn’t get much easier than that!

Last week, we found a couple of jars of Puttanesca sauce, so that will be easier than making the sauce from scratch. We have a prime rib in the freezer, so we’ll thaw that out, and enjoy it on Saturday.

There is one new recipe this week – Zesty Autumn Pork Stew. It doesn’t have to many ingredients, and the instructions say that it will be ready in 25 minutes. Even if it takes a bit longer than that, it’s worth trying, to see how it turns out.

How It Actually Went

Here’s what we actually had this week – we stuck to the plan most of the time! On Tuesday, Keith found some fresh Tortellini at the grocery store, so we used that instead of Ravioli.

On Wednesday, the Toronto Blue Jays were playing in a division final, so we ordered a pizza. Keith made the pork stew on Thursday, and it was good, but not great – see my review at the bottom of the page.

The Veal Scaloppini was delicious, with very tender meat and a tasty coating. The butcher sliced it to order, about 1/3” thick, and Keith cooked it medium-rare.

Zesty Autumn Pork Stew – it was good, but not great. Keith browned the meat, and then put everything into the slow cooker, substituting celery for the green pepper. I enjoyed leftovers the next day, but we probably won’t make it again. If we do, I’ll try it on the stovetop, where it might thicken up a bit, instead of having a very watery sauce.
