Weekly Meal Plan 20161119

There is one new recipe on this week’s menu – Root Vegetable Zoodle Soup. I saw the picture in this month’s Bon Appetit magazine, and it looked beautiful. Keith likes root vegetables and bacon, and I need an excuse to use my Spiralizer, so I hope we try it!

It’s old favourites for the rest of the week, and we can roast a chicken on Monday, or pick up a rotisserie chicken at the supermarket. That will make good leftovers for lunch the next day or two.

On Thursday, we can skip the Arugula Apple Salad that is the side dish for the Panko Pork, and have canned vegetables instead.

How It Actually Went

Here’s what we actually had this week. Keith found veal shanks at the grocery store, so he made Osso Buco on Monday. The chicken and pasta got bumped to the next day, and the soup and pork fell off the menu. I still want to try the Zoodle soup though, so maybe I’ll add it to the menu in January, when the holiday rush is over. That’s a good time to start eating light again!

Our granddaughter came to visit on Saturday, so we changed the Garlic Lemon Shrimp to Fish & Chips – but we’ll put lemon on it!
