Weekly Meal Plan 20161210

We did well last week, sticking to the plan except for one recipe. For this week, I’ve selected old favourite recipes again, and nothing too time consuming.

There are a couple of soup recipes too. It might be wise to eat lightly this week, before the Christmas feasting begins! For the Chinese Longevity soup, we could use leftover roast chicken, instead of the pork that the recipe calls for.

How It Actually Went

Here’s what we actually had this week. Keith found prime rib on sale, and it was more appealing than potato soup, so that’s what we had on Sunday. It wasn’t a huge roast, but there was enough to have leftovers on Monday.

On Tuesday, Keith got all the ingredients ready, and I cooked the Mexican Beef and Rice Skillet. It’s easy to make (especially when someone else does all the prep work!), and a hearty and tasty dinner.

We weren’t in the mood for Longevity Soup on Friday, so we had an unhealthy meal of BLT sandwiches instead
