Weekly Meal Plan 20170107

This week, we’ll start off with a roasted chicken for Sunday dinner. Usually, we poke a few holes in a lemon, and stuff the chicken with that. It adds a bit of flavour to the chicken, and only about a minute to the prep time.

The rest of the week, we’ll have comfort food, to help warm us on the cold and blustery days ahead. Friday night, we’ll order a pizza, or make some here, with dough from the supermarket bakery section.

How It Actually Went

Here’s what we actually had this week – we were both sick, so the meal plan flew out the window, mid-week.

We had roasted chicken on Sunday, as planned, and I enjoyed the leftovers for the next couple of lunches. On Monday, Keith went to the doctor, and I stayed home and made beef stew. It was delicious, and we had plenty for the next couple of days.

The stew was based on a recipe in my old Joanne Kates cookbook. She was the food critic for the Globe & Mail for 38 years, and knows a thing or two about food! A couple of days earlier, I had put some leftover wine into an ice cube tray, to keep it from going bad. I used a few of the wine cubes in the stew, and it worked very well. If we ever have leftover wine again, I’ll definitely freeze it. You can see a picture below.

By Wednesday, I was feeling somewhat better, but Keith wasn’t hungry, so I made sandwiches for the next couple of nights. He was a bit better on Friday, so we ordered a pizza.
