This week we’ll have some old favourites, and lots of slow cooker dinners, to keep things simple. We plan to get back into our routine of going to the fitness centre at least three times a week, now that we’ve almost fully recovered from our colds and mysterious lung infections. With these easy meals, we won’t have to spend too much time on supper preparations.
The pork chop recipe on Monday calls for stuffing and cranberry sauce. We can use half of those ingredients on Thursday, to go along with the roasted chicken.

How It Actually Went
Here’s what we actually had this week – only a couple of meals from the plan actually made it onto the menu. Keith couldn’t find a cottage roll at the supermarket on Sunday, so he brought home lamb chops instead. I’m not complaining though – they were delicious.
He finally found a cottage roll on Tuesday, and we enjoyed that. The leftovers were frozen, and Keith made a big pot of spaghetti sauce on Wednesday. We had more on Thursday, then froze what was left.
Keith found a package of back ribs at Costco on Friday, so that made a delicious dinner. And finally, it was a stressful week, so we just ordered a pizza on Saturday night.
