Weekly Meal Plan 20170128

It looks like another busy week ahead, so I’ve tried to keep the menu simple. We’ll adapt the plan as the week goes along, if necessary.

There’s nothing new on the menu, but it’s been over a year since we’ve had the Maple Glazed Pork. The Swiss Steak and Panko Chicken haven’t been in the rotation for a couple of months, so it’s time to make those again.

And even if the menu plan falls apart mid-week, at least I’m making good progress on decluttering the house, so that’s encouraging. Only another 1000 hours or so, and it should be done!

How It Actually Went

Here’s what we actually had this week – we did a great job of sticking to the plan!

I made the Maple Glazed Pork on Thursday, and it was delicious. It takes a few minutes to cut the vegetables and trim the pork, but that’s the only prep work. It smelled great, the whole time that it was cooking, so I was really hungry by the time it was ready to eat.

The picture below was taken after 15 minutes of cooking. That’s when the vegetables get stirred, and I added the asparagus tops and some mushrooms then. At the end, the meat sits for 10 minutes, and the vegetables get tossed with Parmesan cheese. We’ll definitely make it again.
