Ginger Beef Stir Fry

This recipe is based one found in Taste of Home (March 2017). We really enjoyed this recipe, and it smelled wonderful while cooking. You can see a picture below – it doesn’t look too pretty, but it was delicious.

The original recipe served 4 people, and I’ve reduced it to 2 servings. Also, I’ve broken out the preparation steps, so it’s easier to plan and cook the dinner.

We served it over long grain rice, and had enough left over for my lunch the next day.

Ginger Beef Stir Fry

Ingredients

  • 1/2 tablespoon plus 1 teaspoons cornstarch, divided
  • 1 tablespoons water
  • 1/8 teaspoon salt
  • 3/4 pounds beef top sirloin steak
  • 1/2 cup beef broth
  • 1 tablespoon low sodium soy sauce
  • 2 teaspoons sugar
  • 1 teaspoon grated orange peel
  • 6 teaspoons canola oil, divided
  • 1 medium carrot
  • 1/2 tablespoon minced ginger (from a jar)
  • 1 teaspoon minced garlic (from a jar)
  • 1/4 teaspoon crushed red pepper flakes, optional
  • Rice (follow directions on package to cook)

Preparation Steps

  1. Start the rice cooking (follow directions on package to cook)
  2. Cut the beef into 1/4-inch-thick strips
  3. Cut the carrots diagonally, into thin slices
  4. In a medium-sized bowl, mix 1/2 tablespoon cornstarch, water and salt
  5. Add the sliced beef, and toss to combine
  6. In a small bowl, mix broth, soy sauce, sugar, orange peel and remaining 1 teaspoon cornstarch until smooth.

Cooking Steps

  1. In a large skillet, heat 2 teaspoons oil over medium-high heat
  2. Stir-fry half of the beef until browned, 2-3 minutes, then remove from pan.
  3. Repeat with an additional 2 teaspoons oil and the remaining beef.
  4. Add the remaining 2 teaspoons oil to the pan, and stir-fry the carrots, about 2 minutes.
  5. Add ginger, garlic and pepper flakes (optional – we used them)
  6. Cook and stir until the mixture is fragrant, about 30 seconds.
  7. Stir the broth mixture and add to the pan
  8. Bring to a boil, then cook and stir until slightly thickened.
  9. Stir in the beef and heat through.
  10. Serve with the cooked rice.

Makes 2 servings
