Weekly Meal Plan 20170422

Sunday is Keith’s birthday, and he would like ribs, so that’s what we’ll have. I’m sure there will be an apple crisp for dessert too!

There are two new recipes on the menu this week. The Pineapple and Cashew Stir Fry sounds like a good dish for a spring day, with beans and cashews as the protein. The Slow Cooker Pork Roast with Beans and Spinach looks good too, and can go in the slow cooker at lunch time, or in the morning.

The chicken casserole and spaghetti with Asiago meatballs are things we’ve had before, but not for a long time. Then, we’ll wrap up the week with a couple of easy dinners – grilled cheese and burgers.

How It Actually Went

Here’s what we actually had this week. We stuck to the plan from Sunday to Wednesday, and then took a couple of days off from cooking. On Thursday, Keith played his first round of golf for this year, and his back was too sore to be bending over a hot stove. Fortunately, you can call people and they will bring food right over to your house!

Earlier in the week, we decided to order Chinese food on Friday night, so we went ahead with that plan too. So, we were pretty spoiled this week. Keith bought salmon, scallops and shrimp to cook on the barbecue for Saturday night, and a few vegetables too.
