Weekly Meal Plan 20170805

Happy Long Weekend! Monday is a holiday in Ontario, and in most other parts of Canada, so I hope you’re enjoying some time off work!

Our grandson is visiting this week, so I’ve picked some kid-friendly suppers for Monday to Thursday. I’ll ask him to help me with the Quiche Cupcakes on Wednesday. He loves quiche, and the recipe is from a kids’ cookbook – Cooking Class by Deanna F. Cook. It’s a beautiful book, that I bought a few months ago, and it should be fun to cook together.

Sunday Peppery Maple Chicken

Monday — Fish & chips

Tuesday — Tortellini

Wednesday — Quiche Cupcakes

Thursday — Turkey Schnitzel

Friday Hamburger Scramble

Saturday — Lamb Chops

How It Actually Went

Here’s what we actually had this week.  On Sunday, we ate Ham Steak (leftovers from Saturday), instead of cooking the chicken. On Wednesday, our grandson made the Quiche Cupcakes, and they were delicious! You can see him hard at work in the picture below, and there’s a picture of the finished quiches too. We used a bigger muffin tin than the recipe called for, so ours took about 20 minutes to cook.

By Friday, we were too tired to cook anything, so we ordered Swiss Chalet instead. I forgot that Keith had a golf tournament and dinner on Saturday, so I’ll have a grilled cheese sandwich, and we can have lamb chops some other week.
