Weekly Meal Plan 20170812

Last week was a busy one, so I’ve put a couple of slow cooker meals on this week’s menu. It’s nice to make supper at noon, and then relax and enjoy it at supper time.

Another benefit is that we usually have leftovers from our slow cooker meals, and we can eat those the next day, instead of making a different supper. So, I’ve put Quesadillas and Ravioli on the menu, but they might get bumped off.

For Sunday, we’ll have beef on the BBQ, with salad on the side – that’s quick and easy to make. Also, that is National Filet Mignon Day, so that’s a great reason to enjoy my favourite meal!

The Weekly Plan

Here is our plan for the week starting Sunday, Aug 13, 2017. There are links for some recipes, and others are made “freestyle”.

Sunday — Beef Tenderloin

Monday Slow Cooker Pork With Sauerkraut and Apples

Tuesday — Quesadillas

Wednesday BLT Quinoa Bowls (picture below)

Thursday Slow Cooker Beef-and-Barley Stew

Friday — Ravioli

Saturday Chicken Thighs with Honey Lemon Rice

How It Actually Went

Here’s what we actually had this week. I made Slow Cooker Pork With Sauerkraut and Apples and it wasn’t pretty, but it tasted great. It was really easy to make, and there was no overpowering Sauerkraut taste – just a little acidic kick. And the leftovers made a nice lunch the next day.

I also made the BLT Quinoa Bowls, and we really enjoyed those too. There were several steps, but nothing complicated. Our fried eggs weren’t as pretty as the ones in the Food Network picture, but that didn’t affect the taste! You can’t go wrong with eggs fried in bacon grease. (picture below)
